Simple + Tasty

Although the Hubster is an amazing cook, sometimes after a long day of work neither of us feel like making anything complicated. It's those nights that we try to find something simple but still tasty for dinner. Generally that list includes something like pizza, pasta, or grilled cheese and tomato soup.

The first two generally fly with the Hubs, but the last option is often a big no. Reason being? He just doesn't feel good after he eats it. I know what he's saying - although it's tasty, eating all of that fried up butter and cheese definitely doesn't make you feel like the healthiest person on the planet. That is...until now! After a bit of hunting, here are a few creative ways I've discovered on the web to jazz it up a bit...

Start out by serving it in a fancy plate and bowl (it's all about presentation):

Add gourmet toppings - pears, apples, gruyere, arugula - a little sophistication for your sandwich:

It may be a little bit more work, but totally worth it in the end! Those toppings would work great on a pizza or pasta as well. You could even chop up the veggies/fruits ahead of time so that they are on hand when you need them. I'm no chef (that's for sure) but I think I could totally pull this off.   1. My perfect grilled cheese is with cheddar cheese and thin slices of Granny Smith apples. I'd love to be able to make my own tomato soup to avoid the junk in Campbell's but I haven't been able to make it as rich and creamy :(

  2. We cook every night, but that doesn't mean it's complicated. Tacos are easy, spaghetti and salad are quick, a burger on the grill with fixin's, etc.
    The biggest way we're able to cook every night is planning and prep. I menu plan a full week, every week, based on our schedules. Then, on my days off I chop all the veggies, precook any meats we need for recipes calling for cooked meat, and even assemble some dinners, so all I have to do is pop them in the oven when I get home. :)

  3. Grilled cheese and tomato soup is one of my favorite meals! Especially if it involves tomato basil bread from Panera and V8 tomato herb soup. I could eat it once a week. As for other simple dinner ideas: We do a lot of pasta with stewed tomatoes and omelets or frittatas.
